Recipe of the Month
This mildly spicy soup is delicious and refreshing for a warm summer day! This soup is low in calories and extremely hydrating, with watermelon being the base of the soup and about 92% water. This would be a perfect appetizer for a barbeque.
- 8 cups watermelon, cubed
- 1 apple, diced
- 1/2 cup Vidalia onion, finely chopped
- 1/2 cup green pepper, finely chopped
- 2 teaspoons fresh basil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon chili powder
- 1 tablespoon cider vinegar
In a blender, puree watermelon with the apple and 1/4 cup each of the onion and the green pepper. Pour mixture into a large mixing bowl. Stir in the remaining ingredients (including the other 1/4 cup of onion & green pepper). Refrigerate, covered, for at least one hour to allow flavors to blend.
