August 2012: Orange Sesame Kale Salad and Home-Made Vitamin Water

Orange Sesame Kale Salad

Ingredients

Wash 1 bunch of kale and strip leaves off of stems. Dry and cut into bite-sized pieces.

Whisk Together

  • ¼ cup orange juice
  • ¼ cup apple cider vinegar
  • 2 Tbsp sugar
  • 2 Tbsp soy sauce or Tamari (gluten-free)
  • 1 Tbsp sesame oil

Pour dressing over kale and toss in

  • 2 Tbsp toasted slivered almonds
  • ¼ cup pepitas (pumpkin seeds)
  • ¼ cup cranberries
  • Crystalized ginger (optional)

Home-Made Vitamin Water

  • Add fruits instead of sugar for a natural sweetener for your H20. (Examples: orange, lime, raspberry, strawberry, pineapple, mint, watermelon)
  • Cut the fruit of your choice into paper-tin slices or small chunks
  • Combine ingredients with water
  • Refrigerate 4-6 hours and serve over ice

So delicious and very refreshing!
