September 2012: Loaded Quinoa Veggie Burgers and Chili-Cilantro Sauce

Loaded Quinoa Veggie Burger

Ingredients

  • 1/2 cup uncooked quinoa
  • 1 carrot, diced
  • 3 scallions, sliced
  • 2 cloves garlic
  • 15 ounce can black beans, drained & rinsed
  • 1/4 cup Italian seasoned dried breadcrumbs
  • 1 large egg, lightly beaten
  • 1 Tbs ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 Tbs olive oil

Directions

  1. In a small pot, bring 3/4 cup water to a boil. Add quinoa, cover, & reduce heat to low. Cook until liquid is absorbed (12-14 minutes); set aside.
  2. In a food processor, pulse carrot until finely chopped. Add cooked quinoa, scallions, garlic, beans, breadcrumbs, egg, cumin, salt & pepper. Pulse until combined, but still slightly chunky. Form mixture into 4 patties. In a large nonstick skillet, heat oil over medium. Cook burgers until browned, about 8 minutes per side.

Chili-Cilantro Sauce

Ingredients

  • 1 cup plain Greek yogurt
  • 1 Tbs freshly squeezed lime juice
  • 2 tsp sweet chili sauce
  • 1 small garlic clove, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 heaping Tbs chopped cilantro

Directions

Combine all the ingredients except the cilantro in a medium bowl & whisk together. Stir in cilantro. Use as a sauce for the burger!
